I love cheese, soft or hard, except for gorgonzola! I am puzzled why mozzarella is used for pizza as it doesn't taste of anything [unless anyone can recommend a particular make?]. My favourite is vintage cheddar on toast with Branston small chunk pickle, or a simple flavouring like tumeric or vinegar. Also, a ploughmans with a large baked potato, home-made coleslaw [chopped radish, grated carrot & onion with Heinz Seriously Good mayo], crusty bread and a glass of lager.
I dislike cheddar or any description and use red leicester for cooking. For eating I love all sorts: crowdie, soft goat's cheese, soft blue cheese, wensleydale, cheshire - oh, too many to mention! When I lived on the border of Herefordshire and south Wales, we had a wonderful cheesewright near us (Charles Martell) and our local deli sold his Stinking Bishop. Later, it became famous through Wallace & Grommit (so I was told) and he appeared on the BBC's farming programme, where he was asked whether he'd make more now it was famous? He said he couldn't as his factory was small. He was asked if he'd put his prices up, in that case and he said no, he wouldn't. He'd continue to stock the places he always had and, if there was anything left over, it could go to the new customers.
