About cheeses - what are your favourites? How do you like to eat them?

I love cheese, soft or hard, except for gorgonzola! I am puzzled why mozzarella is used for pizza as it doesn't taste of anything [unless anyone can recommend a particular make?]. My favourite is vintage cheddar on toast with Branston small chunk pickle, or a simple flavouring like tumeric or vinegar. Also, a ploughmans with a large baked potato, home-made coleslaw [chopped radish, grated carrot & onion with Heinz Seriously Good mayo], crusty bread and a glass of lager.

  • My guess is mozzarella is used for pizza because it doesn't taste of much, so that it doesn't overpower other toppings. Good mozzarella definitely does have a flavour though; it's subtle, creamy and delicious.

    I'm not a fan of "blue" (mouldy) cheese of any kind, although I don't mind it as an ingredient, so things like blue cheese sauce on steak, or stilton and broccoli quiche, are ok.

    My favourite cheese is Wensleydale. I'm a bit of a James Herriot fan and had the pleasure of holidaying in the Yorkshire Dales a couple of times when I was a teenager, so we visited the Hawes Creamery to see it being made and of course had lots of ploughmans' lunches that featured the stuff. I loved those holidays.

    But I also love melted cheese in a toastie and you can't beat a decent blend of gruyere and cheddar with a dash of Worcestershire Sauce. Or a brie, cranberry and bacon toastie, yum!

    Then of course there are the salads - a decent Greek salad with feta and olives, or a Caesar salad with good slices of Parmasan or other hard cheese.

    Oh and then of course there's cheesecake. And baked camembert with something to dip into it. Just so many options!
