I just ‘had’ to start a cake thread! I had loads of leftover Easter Eggs and finally found an excellent way to use (some of) them up! Enter the Honeycomb Milk Chocolate Easter Egg Fudge Cake I made a chocolate fudge cake using Easter Eggs instead of Dark Chocolate and Honeycomb Hot Chocolate powder instead of Cocoa powder. The result is a delicious combination of Honeycomb, fudge and Chocolate Easter Egg! The smell is Devine too, my kitchen smells of Honeycomb and fudge!

I haven't had a jaffa cake in years! Good flavour combination though, chocolate and orange!
Can you not make 'healthy' cakes and chocolate that still taste good and aren't quite as bad for you as the 'normal' ones?
Yes, flour too, I only listed the fruit ingredients not the entire ingredients list. It also has the mandatory flour, sugar, butter, eggs, black treacle, vanilla essence etc. It’s also definitely being well fed with brandy between now and Christmas
It’s the same Christmas cake that I’ve made for years, from one of those old fashioned cake recipe books. I’ve never found a better Christmas cake recipe, or, if I’ve found one that looks tempting then I’ve decided to stick with the tried and tested recipe, because this cake really is very very good!
With regards your Christmas cake. I’m sure there must be a sugar free recipe online somewhere? Have you tried any recipes by deliciously Ella? (Vegan cookbook) My eldest daughter is vegetarian and sometimes makes her cakes, I’ve made one before too and they’re not bad. They are certainly free from most things that can aggravate people’s digestive systems.

I've been sent on dieting and healthy eating/living courses, which disapprove of eating cakes and chocolates.
I just ignore the indoctrination and eat a whole packet of Jaffa cakes in one day.
No flour? (sorry- it must have, yes???) And feeding the cake with brandy after it's cooked? A bod at work told me they worked on their xmas cake yesterday, so interesting. I'm at a loss this year what to do for xmas because it's my first without sugars and processed foods. But CAKE is definitely on the menu. (and booze be a good idea too)
Probably! It’s worth trying at least, I’m all for experimenting in the kitchen!
On the subject of cake. Here is my Christmas cake that I made last week, both before and after baking. Fruit wise, it has 800g luxury mixed fruit soaked in brandy, 200g glacé cherries, 200g chopped mixed peel and 100g flaked almonds I just need to feed it brandy over the next few weeks and all will be well, well I’ll certainly sleep well Christmas night!
I am thinking about puree now. Could I do the same thing with dried cherry you think?

Tried the 'more eggs' method and yes I works. Fankoo. I cut back on the butter about 40% but a tad on dry side so I'll try 50%- that's still brill
Yes more eggs definitely helps! Also if you rehydrate dried apricots by simmering them in pre-boiled water until they are all puffed up, then whizz them and a little of the water in a blender, et voila, home made apricot purée, also a good sub for butter :-)
ooh! I've tried reducing the butter and found it dry- more eggs helps then? I add two eggs at moment to 100g of spelt flour (+ 70g butter and 20g olive oil)
I haven’t made a coffee cake in a long time. I do however have a recipe for a ‘healthy’ Tiramisu, caffeine and cake in one hit, I might have to make that when I get home from holiday :-)
My favourite cake is coffee, with or without walnuts.

Your cake looks good Replacing sugar with dried fruit and also replacing butter with egg and/or home made apricot purée is a good way to make healthier cakes.
