My contract states I have to give 1 months notice and I'm really scared about having to work a whole month.
You may well have a different notice period during the probation stage - it is often only a week.
In the worst case you can go on sick leave as you probably won't get paid this during probation and hand in your notice then remain on sick leave. I suspect your employer won't want you to be there if you are unable to work or if it is causing distress.
If you are sure you want to go then speak to your boss and be honest about why - there is a good chance they will be OK with it as it gives them time to start looking for a replacement and probably still have their 2nd / 3rd choices from the interviews still available.
I get it about the constant barrage of phones / voices / tasks - I had a long career in this and it took me a very long time to learn enough meditation to be able to cope well with it.

I was part of volunteer work programme for the past 6months and it went rather well as I was placed in a small team with only one other person in my office and I was pretty much left to get on with my work.
but since I was offered a full-time position I've been placed in a larger team. The phones are going constantly with multiple people all speaking at once and I can't handle it. The workload is also alot more demanding as I'm having to keep switching between tasks. I really don't feel I'm in the right place and I dread having to go in every morning. I'm sorry to hear that - I hope it is not being too damaging for you.
Do you think there is anything that can sensibly be done to make the environment better for you or is it fundamentally unsuitable?
If you can cope with a few minor alterations then I would recommend asking for them but if it is really not suitable then it will be a case of planning how to leave I fear.
Even if you have to leave, try to think of it as a good learning experience on what to avoid or how to prepare yourself for the environment in future. There can always be a positive to found it you try.
