This is an amazing ginger cake, using stem ginger. It's as good as shop-bought Jamaica Ginger Cake, if you can bear to store it a few days before eating. It's made in a 2lb loaf tin, so you can use bought liners, making it very easy. Nice with a glass of ginger wine or spiced hot wine and a good book. I will use 10 balls of stem ginger and double the dry ginger next time, as I like mine really fiery. Happy autumn
