The taste/perception of food has been damaged by my illnesses. I used to like cherries, but I find most of them too sweet now. I prefer them with a medium brix with decent acidity. Frisco and Santina are my favourites. My local greengrocer must think I'm crazy.
I when I go to buy cherries from him, I check each box for the label to see what variety they are. I know what I'm looking for and what to avoid. Sometimes he picks out the bad ones and dumps a mix of cherry varieties into a random box and makes up a fancy name for them. He's very nice to me though. He askes me try them first before buying.

The best cherry I ever tasted was Santina from the greengrocers. The staff asked me to try them and they were perfectly balanced with sugar (brix) and acidity. Each cherry just gave you a burst of flavour.
I've seen Santina and Frisco in supermarkets and they are not the same. The only Frisco cherries that are the real deal are sold in fruit markets under the Toya brand.
