being creative with basics [foodstuffs] - what are your favourites?

With rising food costs, I thought I would re-visit my eating habits. I eat meat, poultry or vege dishes but my favourites are basic. For example, versatile baked beans [supermarket unbranded}:

1. with cheese

2. with vinegar

3. with brown sauce [Lidl]

What are you best hacks for eating simply and cheaply? Do you mind eating the same thing for several days?

  • Everything I make is with basic stuff from supermarkets with the odd trip to an Asian grocer. I'm vegetarian and lactose intolerant, I can have small amounts of cheese like parmessan or a little butter and because of other allergies and intolerances I cook almost everything from scratch.

    One of my favourites is dhal, I usually make it with split mung beans rather than the more common red lentils, but either will do. Pasta with some gently fried courgette, mushrooms, broccoli and tomatoes and a few olives scattered in mixed up with pesto.
