Things to do in Summer - indoors!

Last week I was flicking through an old-fashioned recipe book and my eye lit on a Dundee cake. I like these at Christmas because they have less fruit than trad cake [therefore less expensive].  I just fancied making one - so:

Trouble is, the directions say, 'will improve and develop in flavour if it is kept 2 or 3 days before eating.'  Hmm Thinking....

That’s some fine baking, I’ve no doubt that this is going to be utterly delicious given a few days to mature - my last attempt at baking ended up in two severely sunken, borderline raw, poundcakes.

Finding ways to beat the heat is an art, and staying inside is a great start, I’m sure that there will be more than a few crafty suggestions from our fantastic community.

    Stay cool!

    Thanks - Zac Mod.

It's like any craft - you follow instructions at first, then over time you develop your own style. The only thing I'm useless at is temptation! I've had a slice - but put this down to research! Now I have the base line, I can try again in 2 or 3 days. Most likely 2!
