What's your favourite pudding?

Following the interesting thread posted by TheCatWoman. My favourite diet is reading cookery books in bed. By then I'm too tired to get up and start cooking - thus saving calories.

Tonight, I watched Jamie Oliver's 'Feast for a Fiver, see recipe, 'Jam Treacle Tart' Old-style puds are what we used to get at Junior School. Though the mains were awful I always loved the puds - spotted ***, jam roly poly etc. Heart attack on a plate! 

What's your favourite pud - ones you hanker for and ones you actually make? 

Here's a delicious cheesecake recipe - because it's mainly Greek yoghurt it's less calorie laden than most.

Berry Cheesecake – using yoghurt [source: ‘The Baking Book’ – Good Housekeeping, 2011]

 BASE

100gr melted butter

25 gr ground almonds [or dessicated coconut]

225gr ginger biscuits [other your favourite biscuits]

Almond extract [optional]

 TOP

250 gr berries  [frozen or fresh]

300gr Greek yoghurt

150gr cream cheese

1 tsp gelatine [or vege. Equiv.]

 2 med egg whites, whipped

50 gr icing sugar

 

  1. Grease & line 8” springform tin. Mix first 4 ingredients, press into tin – chill until firm
  2. Puree fruit - sieve if you don’t like pips
  3. Mix yoghurt with cream cheese
  4. Sprinkle gelatine with 2 tbspns. water, melt over pan of hot water
  5. Whisk egg whites with sugar until thick & glossy
  6. fold egg mix with cheese mix, swirl in most of berries
  7. add cooled gelatine mix
  8. pour cheesecake mix over biscuit base
  9. sprinkle rest of crushed berries over top
  10. chill in fridge 3 – 4 hours until firm

ps I've cut myself a large slice as I made this with my own yoghurt which must be lighter than shop bought...

  • You can't beat a cheesecake, lemon is my favourite - It has to taste of that flavour. Putting 1 lemon in and calling it a lemon cheesecake is a waste. Put 10+ lemons in there now you're talking. I always wanted to make a lemon meringue pie (unsurprisingly) but the stress of the prep put me off. Yours looks great. 

  • Lemon meringue pie isn't hard to make, theres just a few processes, you could do the pastry the day before, or buy some ready rolled shortcrust to line your dish.

    You can make the lemon curd and keep it in the fridge over night and then put it all together the next day, you'd have to do the meringues that same day you wanted to use them or they'd go weird.
