post-Christmas: what are you doing with leftovers?

Now is the time to get inventive, using foodstuffs bought for the festive season and now have leftovers that don't go together. I buy ingredients, change my mind what I make, then get this problem a lot! There used to be a website that gave recipes by ingredients - BBC do but I can't find the other one?

  • Not knowing what you have it's a bit difficult to make suggestions, but 

    Make stock from the turkey carcass, use all the bones, skin and jelly bits, stick in a big pan with a couple of onions, carrots, celery, basically any left over veg that isn't potatoes or citrus, a couple of bay leaves, a few pepper corns, any left over white wine and cover with water, bring to the boil and simmer for a couple of hours. Strain the into a big bowl and leave to cool, when it's totally cold skim off the fat and disgard it. Then you have beautiful stock to make something like soups, stews and risotto with. I make soup with all the cheap veg thats been around and freeze it

    Mincemeat is good made into an icecream
