I know that actually staying in Canada after my holiday is just pie in the sky. However, I was made redundant 12 months ago and I have been turned down for every job that I have applied for ever since.

I hope you have a great holiday.
I assume you're visiting British Columbia if combining with Alaska. I've been a couple of times and loved it. Vancouver is regularly rated as one of the top places to live in the world. The scenery in the Canadian Rockies is amazing. If you have got the skills they need and can move there then go for it.
There is always a shortage of IT skilled staff there so you may be able to get a job fairly easily.
Have a browse at their work immigration pages:

I imagine there will be some stresses from moving home, starting a new job, having to learn French (depending on the area French is the default language) and living in a different culture. The winters can also be pretty intense so it will help if you cope well with the cold.
I have a Foundation Degree in Science in Computing. My first full time paid job was in an IT department as a Data Validation Assistant.
