What Breakfasts Fuel Your Autumn / Fall?

As Summer hands over to Autumn; I think it is important to embrace the season harvests of vegetables and fruits which become available at this time of year.

Eating seasonal vegetables and fruits means you are enjoying those food items both at their best quality and most economical prices.

    "Creamy" (no cream) Mushrooms And Vegetables Sauce Served With Wholemeal Toast (no butter or margarine).

    In a small frying pan:

    1 cm depth of water, 1/2 onion chopped, 8 closed cap mushrooms sliced, a generous handful of your choice of mixed chopped vegetables (or frozen peas, or frozen sweetcorn kernels), 1 garlic clove chopped (not too finely), 1 level tsp Marmite / Own Brand Yeast Extract, 1/2 tsp ground coriander, to taste: dried mixed herbs and ground white pepper.

    Bring to a boil, then simmer, stirring occasionally, until vegetables are tender.

    As the water will have evaporated; add some whole milk to become a thick sauce (or milk store cupboard standby: I sometimes use whole milk powder made up as per instructions e.g. Nido Instant Full Cream Milk Powder Tin 400g www.sainsburys.co.uk/.../ProductDisplay ).  Thicken the mixture to preference: by stirring in some own brand instant mash potato powder / flakes.

    Serve with Wholemeal Toast (no butter or margarine).

    Serves: 1.

    This reminds me a bit of it although it's nothing like it ingredient wise, I don't know

    Anyway I'm going to try it. 

    I make my own sourdough so that bit is covered.
