Who here eats sourdough bread?

I know some of you already want to derail this thread with talk about other kinds of bread. Well, don't, please! 

Sourdough bread is magical. It has live bacteria in it that help you digest the bread - and, not only that - help your digestion in general too. It's a bread that feed the good bacteria, the good guys living your gut to help make you a happier, more capable person.

I'm gluten intolerant and even I can eat it because of the bacteria in there. Any other gluten product - pasta, other kinds of breads - give me major issues but not sourdough.

    But it is true that in sourdough the bacteria metabolise some of the carbohydrates into lactic acid. It still has gluten, but the bacteria metabolise FODMAPs, which are indigestible oligosaccharides that normally would be fermented in your gut and can cause people digestive issues. Many people who are gluten intolerant actually have issues with FODMAPs.

    So you can think of sourdough as the bread being partially digested outside of you, and that's why it's easier to digest.

    The best sourdough is homemade. The ones in shops often still use yeast and don't have multiple provings.
