Recommended cookbooks?

Now winter is coming feels like a good time to get back into cooking. What cookbooks would you recommend?

I like River Cottage Veg and River Cottage Much More Veg although I'm a carnivore. Hugh Fearnley-Whittingstall has some creative ideas and most of the recipes could easily have meat or cheese added if that's your thing.

EasyMeals by Rachel Allen is a solid cookbook too with basic recipes that almost always work with the right balance of flavours. Also as I eat gluten free this book gets bonus points from me because Rachel understands how it affects people and makes a lot of the recipes GF friendly.

Paul Gayler's Sauce Book is interesting. He's one of London's top chefs and has had a long and illustrious career. A good sauce can really make a dish. Lots of stuff in there like how to make salad dressings, mint sauce, Thai sauces, all sorts.
